Simple Budda Bowl

What better way then to revive your body with this simply Buddha bowl recipe, packed full of healthy carbs, fats, vitamins and minerals. This for me is the perfect lunch bowl after I have done my morning run as it just fills me with so much energy for the rest of the day. Find the recipe below.

Main Bowl:

- 1 x courgette boiled

- Handful of chopped spinach

- 2 x tomatoes

- 3 x pickled whole beetroot

- 100g of cooked quinoa

- 1/2 x avocado

Hummus:

- 1 x can of chicpeas

- 1/4 cup of fava

- 1/2 x lemon

- drizzle of olive oil

For the main bowl simply just cut up the ingredients and place into a bowl. Season to taste with olive oil, lemon and pepper. With the hummus place all the ingredients above and blend until smooth.
